Croissants and donuts having babies. Waffles masquerading as burger buns. "'Sup" with the upward thrust of a chin. "Hey" instead of "Hello".
I know I sound old-fashioned and derisive when bringing this up, and perhaps rightly so. But when asked to make a pie with a chocolate chip cookie dough crust, I cringe. The thought comes immediately to mind, as to how I'm possibly going to conjure up a filling that can balance a crust that heavy. Why not just order cookies instead? And perhaps a lovely pie to go with it? Because, I've come to realize, shortcuts are the order of the day. Why do three things, when you can do one? And be considered an innovator while you're at it? Now that's just the cherry on the top. Trends are fine and dandy, but at the end of the day give me something that takes time to perfect. Just the right ratio of brown sugar to chocolate. A light touch on buttery pastry. Enough time for dough to rise to a pillowy softness. So, we won't be making cookie pies, but we would love to say hello.
